I’ve been trying to expand my recipe repertoire by looking for more freezer meals to make (as I’m out at least 2 evenings per week now). I was watching Youtube videos on the subject and they recommended these ‘cook once’ meals…so you do all the prep one day and eat for several…kind of like cooking a roast and then using the cold meat.
So I went researching and found this post on Stylist with 20 such recipes…and they’re awesome! (Click the link to see the full article.)
There are several veggie options (I neeeeed that lasagne!), a variety of meats and veggies and several cooking methods in this list so you can pick the ones that suit your time/budget/taste. The majority of these recipes are quick to make for a single meal but can be doubled up for freezing.
Several recipes have a common ingredient so you can make a large batch of chopped veggies/chicken/dough to use for multiple meals. This is great for either having a big freezer-cooking day or just to have a couple of options for quick meals.
I highly recommend you look into this idea, the busier I get the more it appeals to me…well worth a look. 🙂
Happy munching my lovelies!
