Slow Cooker Gammon

Looking back through my recipes, I can’t believe I haven’t shared this one already!….Firm family favourite in our house!

I love it because the slow cooker does the work while we’re at church; teenager will always eat pig in some form given a choice of meats; hubby likes it because he gets proper Sunday dinner, which isn’t possible every week. So win-win 🙂

We also had it last year as our second meat at Christmas, which everyone loved. I hope you like it this much too.

Ingredients:

  • Boneless (rolled) Gammon joint, the one I buy is around 750g for 4 servings
  • 1 Vegetable Stock Cube
  • 2 tbsp Soft Brown Sugar
  • 2 Cups of Cola (full sugar)
  • 2-3 large carrots
  • Water

 

Instructions:

  • Half fill slow cooker with water. Add the stock cube and sugar and stir.
  • Peel and chop carrots and cut into 1 inch/3 cm pieces. (too small will turn to mush in cooking). Add to slow cooker
  • Place Gammon on top of carrots and add cola.
  • Top up water if necessary to be level with the top of the Gammon.
  • Cook on high 6-8 hours (10 am for 6 pm dinner)
  • Remove gammon from pot, take off the fat and shred with 2 forks. (Can be returned to pot to keep warm if you’re not ready to dish up.) Serve with Roast Potatoes and Veg.

Tips:

  • Don’t use diet cola and don’t waste money on brand stuff (obviously you can use brand stuff if you have it already) 60p Supermarket own one does nicely.
  • You can spice it up with sage or oregano if you wish, I used to but as a family who doesn’t add salt to anything, it brought out the savoury-ness of the Gammon (rellies liked it that way for Christmas though) your choice.
  • If you have a more complex slow cooker you may be able to cook on a lower setting, but mine only works on high and warm, I’d rather it was ready early and kept warm than it was under-cooked at meal time.
  • You can check it’s done when you put a fork into it and it’s soft (no resistance/toughness) in fact, it may fall apart as you take it out to shred so have your chopping board close!
  • Can be done in other sizes and traditional crock-pot in a low oven, if unsure look weight of joint up online for cooking times (similar to beef).
  • Great cold in sandwiches or with fried egg and chips as Monday’s treat! 🙂
